Had a good day without cravings. Had oatmeal with cranberries and a spinach / pineapple mango smoothie for breakfast, a salad with cranberries, blueberries and cashews for lunch, several handfuls of cashews for a snack throughout the day, an Odwalla green smoothie for a snack, and quinoa with carmelized leeks for dinner. So far, so good.

I converted to veganism last year and I will never turn back. But if you are doing this to impact your cholesterol, you need to go a step further. When I went vegan, my cholesterol dropped from 265 to 210. But when I cut out oil (ALL oil) I lowered my cholesterol to 150 in a few weeks. Abandoning oil is probably tougher than going vegan because you basically can't eat anything that is carried in a grocery store aisle.
I now eat vegetables, fruits, whole grains (oil free) and legumes. On a rare occasion I will eat a small handful of nuts. I eat no refined sugar and I get the majority of my fat from ground flaxseed (no flaxseed oil, no fish oil, no olive oil etc.).
If you eat like that for 4 weeks .. I GUARANTEE your cholesterol will drop dramatically, your energy level will increase and you will seriously consider extending it to become a lifestyle change.
All the men in my family died of heart attacks at age 60. That will not happen to me. I started this diet to make myself heart attack proof. A year later, I don't miss any of the foods I gave up.
I have become a Dr Esselstyn disciple and it is the best thing I ever did in my life. Veganism is a big step ... but without also eschewing the junk food that is considered vegan and the oil that is omnipresent, your results will not be as impressive as those you saw in forks over knives.

Thanks Dave -- definitely keeping away from harmful oils as well. Your menu looks similar to mine, with the exception of nuts. Thanks for sharing your story, and good luck to you, too!
